Have you read Prince of Thorns by M. Lawrence? It's a dark fantasy with gory descriptions, and there's also some gore in The Name of The Wind by P. Rothfuss, but otherwise, I'd totally recommend The Skeleton King by Serge Brussolo! It's so fun while being twisted, bloody and dark.
